Ultimate Nourishing Comfort Food: Sweet Potato & Carrot Smush!

I haven’t posted a recipe for AGES and last night I made a mighty good concoction! Something I like to call a “Smush” 🙂 It was so simple, delicious and highly nutritious! Containing one of my favourite veggies – the humble Sweet Potato, AND my all-time fave, go to spice, Turmeric. This orange powder and root goes in EVERYTHING, my smoothies, my baking, even on my face!

So, just why are Sweet Potatoes so bloody amaze?!

Well, they are an excellent source of:

  • vitamin A (in the form of beta-carotene)
  • vitamin C
  • manganese
  • copper
  • vitamins B6, B1 & b2

Additionally, they are a good source of potassium, fibre and phosphorus, which plays an important role in the production of ATP – the bodies energy source.

Ingredients (makes 3- 4 servings depending on how greedy you are :-))

  • 3 sweet potatoes (I used organic)
  • 7 carrots (I used organic)
  • 1 bag of spinach – 1 handful per serving (I used organic)
  • Sundried tomatoes – 5 per serving
  • Plain cottage cheese – 1 tablespoon per serving
  • 1 can organic baked beans
  • 1 tsp turmeric
  •  3 tablespoons melted coconut oil
  • 1 tablespoon basil
  • 4 cloves of garlic
  • Pink himalayan salt & black pepper to season


  • Wash the sweet potato & carrot
  • Chop the sweet potato & carrot – leave the skin on – and arrange on baking trays lined with baking paper
  • melt the coconut oil and stir in the basil and turmeric
  • drizzle the oil mix all over the potatoes and carrots thoroughly
  • chop the garlic cloves and add to baking tray
  • season
  • pop in the over at 180 for 30-40 mins until perfectly roasted
  • place a handful of washed spinach in the bottom of a bowl
  • add your portion of roasted veggies
  • add 1/4 can of warmed beans
  • add 1 tablespoon of cottage cheese
