Ultimate Nourishing Comfort Food: Sweet Potato & Carrot Smush!

I haven’t posted a recipe for AGES and last night I made a mighty good concoction! Something I like to call a “Smush” πŸ™‚ It was so simple, delicious and highly nutritious! Containing one of my favourite veggies – the humble Sweet Potato, AND my all-time fave, go to spice, Turmeric. This orange powder and root goes in EVERYTHING, my smoothies, my baking, even on my face!

So, just why are Sweet Potatoes so bloody amaze?!

Well, they are an excellent source of:

  • vitamin A (in the form of beta-carotene)
  • vitamin C
  • manganese
  • copper
  • vitamins B6, B1 & b2

Additionally, they are a good source of potassium, fibre and phosphorus, which plays an important role in the production of ATP – the bodies energy source.

Heaven in a bowl!
