Yesterday’s spotlight ingredient (of Day 16 “Welcome to Wellness”) was the Onion (don’t cry about it ;-)) sooo I have updated last weeks success the Broccoli and Artichoke Bread. I love these breads as they are SO simple and quick to make, yet are packed with nutrients, and are extremely versatile. Mine is wrapped in foil in the office fridge ready to be sliced and topped with avo, nut butter, smoked salmon, humus, etc!! The world is the onion breads oyster!
Onions are super-healthy. They are excellent sources of vitamin C, flavonoids and phytochemicals. A lot of the foods we have covered so far are rich in phytochemicals; these are plant chemicals that have protective or disease preventive properties. Plants produce these chemicals to protect themselves but recent research demonstrates that they can also protect humans against diseases!

Onions promote:
- Heart Health
- They are anti-inflammatory
- Protect the body from free radicals
- Help with digestions because of the fibre
- Help regulate blood sugar levels
Ingredients and Instructions
- 1 small onion
- 1 avocado
- 3 handfuls of Kale
- 5 eggs
- 5 tbsps of ground almonds (you can grind them in your nutribullet or blender!)
- 1 tsp himalayan salt
- half tsp baking powder
- 5 cherry tomatoes
- 1 clove of garlic
- 1 tbsp coconut oil
- blend together until you have your batter
- pour into a loaf tin and bake at 200 degrees for 40-50 minutes, until risen!
This one is very moist, so in your ingredients above I added 2 more tbsps of ground almonds – in mine I only used 3. So I guess if you like it moist (Karen, Liz, Elise) then use less 😉
