Brocolli & Artichoke “Bread”

Welcome to Wellness week 1, day 7 recipe includes today’s AND Fridays spotlight ingredients. Broccoli (which I have spoken about before) and Artichoke, which I will use to make an excellent bread alternative.

  
Broccoli is the best selling green vegetable in the UK, it is low in calories and high in fibre and vitamins- it’s a nutritional powerhouse!

Artichoke has potent disease fighting & anti ageing properties, it’s detoxifying, helps improve the health of the liver AND (wait for it, seems like fate Artichoke is our Sunday star ingredient) it helps eliminate hangovers!!!!

I have made types of this bread before but today is my first time combining Brocolli and artichokes. Eeeeeek! I do love strange unusual combinations!!

  
Ingredients and Directions

  • 5 eggs
  • 1/3 jar of nut butter
  • 1 piece of turmeric root
  • 1 tsp Himalayan salt
  • 1 tsp honey
  • 1 tbsp apple cider vinegar
  • 3/4 tsp baking powder
  • 6 roast artichoke hearts
  • 170 grams of chopped broccoli “heads”
  • 100g mixed raw nuts
  • Combine all ingredients in a blender until smooth
  •   
  • Pour into loaf tin
  • Bake at 180 for 45 mins

Pop out and leave to stand! I just had a piece topped with avocado and can confirm it is GOOD! This bread is high in protein and packed with vitamins and minerals and is perfect to take to work for breakfast or lunch, either on its own or topped with some coconut oil, avocado, hummus or tomatoes!
